It’s not so long ago that almost every farmer in Ireland would keep a few pigs for their families, but I never thought I’d be one of the new cohort to take on pig keeping again.

Unfortunately, though, my pedigree Herefords have been a victim of their own success and we sold so much organic beef from the farm shop this year that if I kill any more of the herd, they’ll be at risk of extinction.
